My Spanish Spiced Sweet Potato & Butternut Squash Soup is silky rich, spicy and warming – just delicious and guaranteed to cheer up the dullest of days…
Ingredients:

1/2 butternut squash, peeled and chopped into chunks
1 sweet potato, chopped into chunks (not peeled)
1 onion, sliced
Beef stock
Beef dripping (or coconut oil/olive oil)
Sweet paprika
Cayenne pepper
sea salt

Method:

Melt the beef dripping in a large saucepan and fry the onions on a low heat until soft and lightly coloured
Sprinkle on a teaspoon of sweet paprika, 1/2 a teaspoon of cayenne pepper (adjust to your own tastes), and sea salt. Stir in and fry for a minute
Add the chopped squash and sweet potato, stir in to the onion and spice mix
Add enough beef stock to cover the veg – if you’re using store bought, top it up with boiling water – and put the pan lid on
Bring to the boil and simmer for about 30 mins until the veg are soft
Take the pan off the heat and leave to cool slightly, blitz with a hand blender until silky smooth
