Quick and Easy Root Veg Soup

  • 1 large or two small sweet potatoes, chopped into chunks (washed but not peeled)
  • 1 parsnip, chopped into chunks (washed but not peeled)
  • 2 carrots, sliced (washed but not peeled)
  • 1 leek, washed and sliced
  • organic veg bouillon powder
  • 1 clove of garlic, sliced
  • ground cumin to taste
  • sea salt
  • black pepper

  • Sweat the leek in a little olive oil over a lowish heat until it starts to go soft
  • Add the garlic, cumin and chopped veggies, stir for a minute
  • Add enough water to cover the veggies + a little extra
  • Sprinkle over some vegetable bouillon powder
  • Stir well, bring to the boil then turn down to a simmer
  • When the veggies are cooked, you’ll need to blend the soup – it’s advised that you let the soup cool before doing this unless you’ve got a blender with a hole in the top for steam to escape
  • I blended mine in my NutiBullet in small batches.


To serve, I swirled in some plain natural yogurt and 1/3 block of feta. Delicious.
